Hot damn, I love to cook.

Nothing makes me happier then to transform simple ingredients into something delectable. I whipped these up this morning on a whim, they're gluten free almond pancakes with a citrus berry maple syrup. The batter is really simple, its just ground almonds, eggs, water, and a little oil and honey. Then you just cook as you would with any pancake batter. The syrup is fairly simple too, its just maple syrup, strawberries, blueberries, raspberries, lemon zest, and a squeeze of honey for a little added complexity. Put that on the stove and let cook until soft, bubbly, and even in color. Delightful.

2 cups ground almonds
4 eggs
1/2 cup water
1 tsp olive oil
1 or 2 tsp honey
Salt to taste

The recipe I followed said to just mix it all up, but it was a bit dense, so I was thinking it might be better to separate the eggs, softly beat the whites, and incorporate them at the end. Also I put in more water because it looked a bit thick.
